For demonstrating my Home Theatre capabilities, I tend to start with some DVD-Audio...high clarity and superior dynamic range. Metallica's black album always kick a little A$$.
Movie, have to go with the ever popular Episode 1 pod race and the Seismic charges of Episode II.
I've also been pretty fond of the sound in Any Given Sunday, Fast and the Furious, The Haunting, Moulin Rouge (the awesome thunder of the windmill sweep), Pearl Harbor (when ben affleck dies...DIE DIE DIE!--j/k, the battle), Requiem for a Dream, Saving Private Ryan (D-Day), Band of Brothers (Especially Bastonge), and We Were Soldiers.
But probably my favorite disc to demo is The Eagles, Hell Freezes Over. The most impressive use of Multi-Channel music I've heard to date.
