Pretty much all comercial theaters use Stewert screens. And they are the prefered screen in home theater use as well, however they do not come cheap, especially anything that rolls up. I'm guessing you will be in the $1500-2000 range for an 80" Stewert.
Da-lite is the next best alternative, and like mentioned about, check out AVS forums, they have a TON of great information.
I'm currently using a 8" sheet of drywall painted with a matt white finish (and an undercoat of light grey) and then I masked it with some dark black fabric for my Piano. It works great for now now --I'll be looking at "real" screens in the future.
