Of the movies you have listed, I would go with Three Kings. Most likely several people in you gathering haven't seen this amazing film. It also has great surround effects. Be sure to ask your boss if you can stay the extra 10 minutes to watch the Spike Jones directed piece "An Intimate Look at Acting, with Ice Cube."
If you're going to watch an Alien movie, then I have to say that Aliens is the better choice FOR THIS OCCASION. No offense to the first film, the James Cameron sequel has much better surround sound. Also, it has the director's cut, which has footage many of these people probably haven't seen.
HOWEVER, if you're boss's system is the best, then you might want to watch a DTS EX 6.1 disc; with Terminator 2 you can't go wrong.
Not that you're going to choose Brazil, but if you decide to go with a Terry Gilliam film, 12 Monkeys has better surround sound.
Stay away from laserdiscs for this rare opportunity, as you won't get optimal picture quality.
An just to reiterate, in THREE KINGS they blow up a cow. That's a film experience.
