I didnt even know this thread existed, anywho here is my list...

Blade II - New Line Platinum Edition
Without a doubt one of the best DVD transfers I have ever seen. The DTS and Dolby tracks are agressive and the video transfer is sharp.

Terminator 2: Judgement Day - Extreme Edition
The digital transfer is by far the best video transfer I have ever seen. The booklett inside gives an excellent description of the feats taken to improve and master the video quality. Definite demo material.

The two Lord of the Rings - Extended Editions are also excellent and always demo material aswell.
