How could there possibly be a difference between the two in terms of quality? They both send the same one's and zero's to the receiver. That's the beauty of digital; the same signal no matter what. Now, I have heard that optical will not be as prone to interference by outside sources since it is based on light, unlike coax. However, I've also heard that coax is more robust and durable than optical. So I think that would be your main concern. Like I said, I don't see how there can be a difference in quality since they are both digital, hence both sending the same signal.
