Things I would find interesting to explore:

Lilo & Stitch - use of watercolor as a throwback to an earlier Disney style.

Lady and the Tramp - use of CinemaScope.

Monster's Inc. - state of the art digital creation.

Sleeping Beauty - use of Super Technirama 70.
