I'm currently running a Radeon 9700 pro, on my intel 2.53 ghz P4, which of these 3 cards would be the best bang for my buck?

Ruined, the x800 from ATI is 319, the 6800GT is 319, which of the two would you recommend as the best card for my pc?

6800GT for sure. The x800 is a 12 pipe part, has only shader model 2.0b, and doesn't support FP16 HDR or FP32 shaders. The 6800GT is a 16 pipe part, has Shader Model 3.0, has FP16 HDR and FP32 shaders. The 6800GT is faster and more future proof, easy choice.

Any valid reason to go to the U over the GT, or is it just marketing bullshit?

6800U has faster core and memory, but in the end anything that makes the 6800GT crawl will make the 6800U crawl as well, not worth the extra money.
