Artistic differences mainly. Why do some movie seem more grainy than others. Why are some color and some b/w? Why are some shots filtered? These are just some of the things that make eaach film different. Many feel that ARs wider than 1.85:1 have a more epic look and feel to them. For some reason that I can't really explain I tend to agree with that.

Try reading "How Video Formatting Works" on HowStuffWorks.com. It gives a history of Aspect ratios and may offer some answers for you.

That's a pretty good site, palebluedot.
zombie-Most movies nowadays are going to be either 1.85:1 or 2.35:1; there are exceptions, but it's usually one of the two. For info on earlier widescreen techniques, www.widescreenmuseum.com is a great site to check out.
